No Grain Waffles with Blackberry Jam

Enjoy this delicious no grain waffles topped with a simple jam made with frozen blackberries and chia seeds, no need for extra sugar.

Ingredients

For the Waffles

  • 1 cup Birch Blenders Paleo Mix
  • 3/4 cup water
  • 1 tbsp coconut oil

For the Blackberry Jam

  • 1 bag frozen blackberries
  • 1/4 cup chia seeds

Instructions

  • For the waffles: Mix Birch Blenders Paleo mix with water and coconut oil.
    Once everything is well mix together use an ice cream scoop to pour the mixture into the waffle maker. It will help you have less of a mess.
    For the blackberry jam: heat a stovetop on medium heat. Add your frozen blackberries or any frozen fruit you like. Cover and let the mixture defrost.
    Once the berries are defrosted and soft, use a potato masher o mash up the mixture to your desired consistency.
    Add the chia seeds and continue to simmer for about 3-4 more minutes.
    Store leftover jam in the refrigerator, covered, for about 1 week.
