Healthy Tofu Bowl with Cauliflower Rice

This Healthy Tofu Bowl with Cauliflower Rice is gluten-free vegan and paleo friendly. You can make the cauliflower rice and tofu over the weekend and just assemble everything together when it is time for dinner.

If you are like most parents you probably think you are too busy to cook at home. And that with kids night routine there is simply no way you could prepare yourself a healthy dinner.  Being a mom of an almost one-year-old baby I totally understand this. You wake up, drop your children at daycare, go to work and come back home to bath your kids and put them to sleep. When could you possibly be preparing yourself some food?

When you have kids your life makes a 365-degree change. In fact, I am writing this at the library as my son naps after story time and before we leave for a kids party at 5 pm. Saying this as parents we definitely need to plan more if we want to make healthier choices.

It took me some time to get used to being a mom and to establish a routine that could work for everyone in our home (including our dogs). Today meal prepping has slowly become part of my routine on Sundays and I don’t dread it anymore.

All you have to do is start by doing a meal plan for the week ahead and then write down a list of the items you can prepare ahead of time. For me, this is the worst part but once you accomplish this you are already halfway there.

The other half comes to actually buy everything you need and obviously cooking. If you are a little lazy like me you can always use a delivery service and get everything straight to your door. Healthy Tofu Bowl with Cauliflower Rice

Ingredients
  • 12 ounces tofu, extra firm, (or 16-ounce package)
  • 2 tbsp. low sodium soy sauce
  • 1 tbsp. wine vinegar
  • 2 tbsp. sesame oil
  • 4 cups cauliflower rice, about 1 large head grated
  • 2 cups kale, finely chopped
Directions
  • Step 1 Drain the tofu on top of several pieces of paper towels for approximately 10 minutes. I like to put something heavy on top of the tofu to help it release all the extra water.
  • Step 2 Cut tofu into ½ inch thick slices, then cut into cubes.
  • Step 3 In a large nonstick skillet, heat sesame oil over medium-high heat. Cook half of the tofu for 2 minutes, until golden brown and slightly crisp.Turnover and cook another 2 minutes.
  • Step 4 Transfer to a plate lined with paper towel and repeat with the remaining tofu.
  • Step 5 For the cauliflower rice. Heat a wok or large skillet over medium-high heat. Add 1 tbsp. sesame oil.
  • Step 6 Add the cauliflower rice and season with salt and pepper. Stir-fry for about one minute. Cover and cook for 5 minutes or until tender, stirring every few minutes.
  • Step 7 For the kale.Heat olive oil in a large saucepan over medium-high heat. Add the garlic and cook until soft.
  • Step 8 Add the kale and 1 tbsp water. Cover and cook for 5 minutes.
  • Step 9 Remove cover and add 1 tbsp. soy sauce and 2 tbsp. red wine vinegar toss to combine and continue to cook.
  • Step 10 Remove from heat and season with salt and pepper.
  • Step 11 Prepare the tofu bowls by dividing cauliflower rice, kale, and tofu. Enjoy!
