By now you have probably noticed I love to eat dessert for breakfast. For me, this is a way to satisfy my cravings for sweet things and avoid reaching out for sugary snacks or desserts in the afternoon. See the level of insulin in the body fluctuates throughout the day, but is typically highest in the morning. That means all the sugar stored in your body in the early hours is more likely to be converted into fuel, rather than stored as fat, which is what happens when you reach out to those candies in the afternoon.
Plus I always try to have a balanced breakfast even though they are on the sweeter side. For example, these waffles are high in fiber and protein thanks to the oat and almond flour. And most of the sweetness comes from the ripe bananas rather than adding refined sugars. I still add a little bit of agave but you can leave it behind if you want.
Tips to Make the Perfect Healthy Chocolate Chip Waffles
- Separate your eggs. If you want fluffier and lighter waffles you want to make sure you separate the egg whites from the yolk. Then mix your yolk with the rest of the ingredients and on a separate bowl beat ht whites until they form stiff peaks. Once your batter is well mixed gently fold the whites.
- Don’t over mix. You want to start by combining your wet ingredients and dry ingredients in separate bowls. Then carefully add your wet ingredients into your dry ingredients and mix just until they are loosely combined.
- Use an ice cream scoop to scoop your batter. This way you will avoid making a mess and all your waffles will be the same.
Healthy Chocolate Chip Waffles
- 3-4 ripe bananas
- 2 tbsp almond milk
- 2 eggs
- 1 cup oat flour
- 1 cup almond flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
- Separate your egg whites from the egg yolks and leave the whites aside. In a small bowl mix all the wet ingredients including your egg yolks. In a large bowl add the oat flour, almond flour, baking powder, cinnamon Stir until well combined
in a separate bowl beat the egg whites with an electric-mixer until stiff peaks form.Pour the wet ingredients into the bowl with the dry ingredients and stir just to combine. Add the beaten egg whites and carefully fold in just until incorporated. Fold in the chocolate chips with just a couple of light stirs. Do NOT over-mix, or the waffles will be dense. Preheat your waffle iron on medium-high. Lightly grease and bake waffles.I use about 1/4 cup of batter per waffle, and I scoop it with a ice cream scoop to make less of a mess.
