Healthy Asian Soba Noodle Salad

This Healthy Asian Soba Noodle Salad works perfectly as a side dish or light lunch. Soba noodles are gluten-free, low in calories and high in fiber which makes them a perfect alternative to regular pasta.

Thai food has always been one of my favorite foods. I love the sour, sweet and salty tastes you can get from almost every dish. You could also say that Thai food is in generally healthy, yeah does fried spring rolls are definitely not on the healthy side. And every main dish is accompanied by rice or noodles. I have seen them use rice even on desserts and trust me it tastes amazing! In fact, one of my favorite desserts is green tea ice cream with sticky rice and mangos.

Soba Noodles vs. Pasta

Thai noodles are different than what we know as traditional noodles, which is basically pasta. Since they are made with rice or soba instead of wheat. I especially like soba noodles because they offer a lower-cal alternative to wheat pasta. Plus they are higher in fiber and protein.

I tried soba noodles for the first time at a friends house and fall in love with them. Especially because I think they are super versatile and work well with everything. Warm or cold, with veggies or meat. You name it!

What makes this Healthy Asian Soba Noodle Salad so great is the Spicy Peanut Dressing. I promise this dressing will make your salad go from ordinary to extraordinary.

Healthy Asian inspired Soba Noodle Salad

Healthy Asian inspired Soba Noodle Salad featuring cabagge, carrots, soba noodles and a quick homemade spicy peanut dressing.

Ingredients
  • 300 g of soba noodles
  • ½ chopped cabbage
  • 3 grated carrots
  • For the peanut sauce:
  • ½ cup natural peanut butter (should be runny)
  • Juice of 1 lime
  • 1 tbsp tamari
  • 1 tbsp. sriracha
  • 2 cloves garlic, minced
  • ½ tbsp ginger, grated
  • ½ tsp coconut sugar
Directions
  • Step 1 Cook the soba noodles in boiling water for 7 minutes. Once they are ready, drain and place on the side.
  • Step 2 Grate the carrot and set aside. Chop the cabbage and the romaine lettuce and pour them in a bowl along with the carrot.
  • Step 3 For the dressing mix all the ingredients together.
  • Step 4 Add the noodles to the salad dressing and stir.
