Coconut and Peach Popsicles

This recipe is great now that days are starting to be warmer, especially here in Miami. I made this recipe with coconut milk because it is an excellent substitution for dairy and I added bits of shredded coconut to the coconut one to add a little texture and crunch to it.

I am sure you are gonna love them.

Coconut and Peach Popsicles

No cream popsicles

Ingredients
  • For the coconut popsicles:
  • 1 can full coconut milk
  • 1 tsp. vanilla extract
  • 2 tbsp. maple syrup
  • 1 tbsp. shredded coconut
  • For the peach popsicles:
  • 2 cups frozen peach slices
  • 1 can full coconut milk
  • 1 tsp. vanilla extract
  • 2 tbsp. maple syrup
Directions
  • Step 1 Combine all of the ingredients in a blender, and blend until very smooth. Adjust sweetness to taste, if necessary, keeping in mind that the final frozen result will taste less-sweet than the room temperature mixture.
  • Step 2 Pour the mixture into an ice pop mold and allow to freeze for 6 hours, or until frozen solid.
  • Step 3 Before unmolding, allow the popsicles to sit at room temperature for about 5 minutes.
