This Easy Healthy Fried Rice is a no-fuss weeknight meal that is so much better than takeout. Plus, it is made with RightRice. If you haven’t heard of RightRice, you don’t know what you have been missing out.
I recently heard about RightRice through a friend of my husband’s who works for the company. When she shared about their products I was immediately hooked! So basically RightRice is just like rice except it is a lot more nutritious. RightRice is made out of vegetables to bring you lots of flavors plus it is high in protein and fiber and low in carbs.
And the reason I loved their products so much is that aside from being so nutritious they are tasty too. Because let’s be honest there are a few products in the market that are definitely very nutritious but sometimes they are missing flavor (a.k.a they are not very good). Well, let me tell you RightRice tastes as good as rice.
Since I was little rice has been a staple at our home. We used it as a side dish for every meal. We usually cook it with onion powder, garlic powder and, tomato sauce for extra flavor and color. That is probably why my favorite one from RightRice was the Spanish flavor one.
How to Make Fried Rice
Now for the recipe. All you need to do really is add the rice and hot water to a pot. Once it begins to boil turn the heat off and let it stand for 12 minutes. Then using a fork fluff the rice and add your vegetables and scramble eggs.
Easy Healthy Fried Rice
- 1 cup RightRice
- 1 cup water
- 1/2 cup frozen peas and carrots
- 1/2 cup frozen brocoli
- 2 large eggs
- In a medium saucepan, bring 1 cup of water to a boil. Add 1 cup RightRice®,immediately remove from heat, and cover. Let stand covered off heat for 12 minutes. In the meantime cook you frozen vegetables according to the instructions. Fluff rice with a fork, let sit 2-3 more mins, and add vegetables and cooked egg.

I first came across Ayurveda when I took my first yoga teacher training back in 2012. If you are not familiar with it, Ayurveda is one of the world’s oldest whole-body healing systems. It’s based on the belief that health and wellness depend on a delicate balance between the mind, body, and spirit. Which I 100% believe and I think more and more people are starting to realize this.
A fundamental Ayurvedic philosophy is that “food is medicine and medicine is food”. So it pays especial attention to not only food but the different combinations. While I was studying Ayurveda I came across Turmeric. From an Ayurvedic perspective, Turmeric is believed to be anti-fungal, anti-bacterial, anti-inflammatory, anti-aging and anti-carcinogenic. It is excellent for digestion, helping to reduce gas, bloating, cramping and colic and aids the digestion of protein. Due to all of this properties it started to gain a lot of attention lately. You can know find it in any health-related magazines or websites. In fact you have probably hear of golden milk, which primary ingredient is Turmeric or even try it yourself.
As a firm believer of the power of medince and they Ayurvedic philosphy I do try to incorporate turmeric on a regular basis. This Anti-inflammatory turmeric rice is so simple to make and add a pungent and bitter flavor.

- 1 cup white basmati rice
- 1 teaspoon salt
- 1 teaspoon black pepper
- ½ teaspoon turmeric
- 2 cloves
- 1 teaspoon lemon juice
- Step 1 In a medium saucepan, bring 3 cups of water to boil. Add the rice, salt, pepper, turmeric, and cloves. Let boil for 2 minutes, and reduce the heat to low.
- Step 2 Cover and let the rice simmer.
- Step 3 Let the rice cook for 15-20 minutes. Once fully cooked, add the lemon juice and fluff with a fork.

So Adrian has been out of town for 3 days now. Which means I have been by myself with two dogs and a one-year-old. If you are a parent then you probably know this translates into absolutely no time. I must confess I didn’t even shower on Sunday.
Having said this of course I didn’t have time to cook fancy meals for myself but that doesn’t mean I reached out to frozen meals. God, I cannot hate those more! They are not only packed of processed foods but taste awful. I tried a couple of different ones when I first started working and I would never do it again. If you are a frozen food fanatic sorry to disappoint you but they are just awful. There is no other words. Try preparing the same meal from scratch just to see the difference and I bet you will be surprised!
Anyway since I didn’t want to reach for frozen foods I prepared myself healthy meals that take less than 10 minutes to prepare. Plus I they will help me keep f well-nourished and energized to keep up with this crazy one-year-old.
Another great thing about this Vegetarian Lentil Salad is that you can have it warm or cold and it tastes great both ways. I like mine topped with fresh cheese but if you are on the dairy-free wagon you can always leave it out.
Next time you are about to reach for that frozen meal think of this Vegetarian Lentil Salad and make yourself something good in no time.
Vegetarian Lentil Salad
This vegetarianlentil salad recipe is healthy, fresh, and totally delicious! It makes a great light meal or side dish.

- 1 cup of lentils cooked (you can use can lentils)
- 1 diced tomato
- 30 gr panela cheese
- 1 avocado
- ¼ cup of apple cider vinegar
- ¾ olive oil
- ½ tsp garlic powder
- 1 tsp mustard
- ¼ tsp of salt
- Step 1 To make the dressing, in a small bowl mix the vinegar, olive oil, mustard, garlic powder, and salt.
- Step 2 Place the lentils in a bowl and add the diced tomato and dressing. Stir everything together. Finally, add the panela cheese and avocado.
