I thought of saying goodbye to the summer with this delicious Peach Cobbler recipe. Every bite is layered with late summer pitches, rich almond butter, warming cinnamon and coconut sugar. The peaches are juicy while the crumble topping is crispy and buttery. And as intimidating, it might sound it is just so simple to make! What a better way to say goodbye to the summer than enjoying this cobbler top with coconut ice cream. 

How to Make Peach Cobbler: 

  1. In a medium bowl toss together peaches, lemon, cinnamon and a pinch of salt and set aside. 
  2. Melt coconut oil and coconut sugar in a medium skillet over medium heat. Add peach mixture and cook, stirring occasionally until caramelized about 5 minutes. Remove from heat and set aside. 
  3. Preheat oven to 350 degrees F. 
  4. In a large bowl mix together oats, baking powder, cinnamon, and salt. Stir in the milk just until combined. Add the peaches and stir. Pour the mixture into a baking dish and set aside. 
  5. For the crumble: Mix the almond flour, coconut flour, oats, coconut oil, and almond butter. Spoon the crumble on top of the baking dish and place in the oven. 
  6. Bake at 350 degrees for about 40 minutes. 
  7. Serve warm with a scoop of coconut ice cream.

I am a big fan of overnight oats. I just think they are a fun and delicious way to enjoy oats. Plus they are lots of different delicious and fun variations you can try so you can have a different flavor every day.

How to Make Overnight Oats

Overnight oats are one of the easiest recipes you can possibly make. They literally require less than 5 minutes to prep and require no cooking or baking. Plus they are very easy to make ahead the night before and they will be ready to grab and go the next morning.

  1. Add oats to your mason jar or container and add any milk of your choice.
  2. Flavor with sweetener or spices. You can add any sweetener or spice that you like.
  3. Shake until well combined and chill in the fridge.
  4. Top with your favorite nuts, seeds, and fruits.

No Grain Waffles with Blackberry Jam

Enjoy this delicious no grain waffles made with Birch Benders Paleo Mix and topped with a simple jam made with frozen blackberries and chia seeds, no need for extra sugar.

I love Saturday mornings so much. We usually stick to the same morning routine which is going for a run to the National mall followed by a delicious brunch, which almost every Saturday it involves waffles. If you follow me on instagram @marianadiezcoach or have checked my last couple of recipes you would probably notice 1 out of 5 is a waffle recipe. But we just love waffles so much. Honestly, we crave them the whole week, well at least me!

This is my first time trying Birch Benders Paleo Mix and I highly recommend it! First of all it is so simple to prepare. All you need s water and coconut oil. As for the taste they are great and the perfect balance of fluffy and crispy just the way you want your waffles.

And then for a twist I topped them with these delicious blackberry jam. I know when I say homemade jam it might sound kind of intimidating and you might just think why not just get store bought jam. I don’t want to burst your bubble but most of the time commercial jams are loaded with sugar. Plus once you try the real deal you won’t want to get the store bought version.

How to Make Blackberry Jam

To make the jam all you need to do is heat a stovetop on medium heat, then add your frozen blackberries or any frozen fruit you like. Cover and let the mixture defrost. Once the berries are defrosted and soft, use a potato masher o mash up the mixture to your desired consistency. I like some texture in my jam, so I don’t mash it much. Add the chia seeds and continue to simmer for about 3-4 more minutes. Store leftover jam in the refrigerator, covered, for about 1 week.

No Grain Waffles with Blackberry Jam

Enjoy this delicious no grain waffles topped with a simple jam made with frozen blackberries and chia seeds, no need for extra sugar.
Servings: 2 people

Ingredients

For the Waffles

  • 1 cup Birch Blenders Paleo Mix
  • 3/4 cup water
  • 1 tbsp coconut oil

For the Blackberry Jam

  • 1 bag frozen blackberries
  • 1/4 cup chia seeds

Instructions

  • For the waffles: Mix Birch Blenders Paleo mix with water and coconut oil.
    Once everything is well mix together use an ice cream scoop to pour the mixture into the waffle maker. It will help you have less of a mess.
